An attractive blend between two Bulgarian varieties. Rich ruby color and complex nose with nuances of ripe black fruit, chocolate, and vanilla. Full-bodied, elegant palate with soft tannins. The wine has matured for 18 months in 100% Bulgarian oak. Possibility of noble rot development.

Aroma and Flavour

An attractive blend of Bulgarian indigenous varieties. Dark red color with slight garnet hues, complex aroma of ripe forest fruits, blue plum jam, combined with earthy tones, tobacco, and spices. Full-bodied and balanced palate, with subtly drying tannins and a spicy finish.

Suitable foods

Pairs well with red meats, game, and cured delicacies.
Sauces: Wine, Hoisin, BBQ, or blue plum sauce.
Cheese: Brie, Gouda, Emmental, blue cheese.

Vinification

Subsequent selection of grapes upon arrival at the winery, destemming, crushing, and cold enzymatic maceration at 7-9˚C for 5 days, alcoholic fermentation at 26-28˚C for 7-9 days in stainless steel fermenters with full temperature control. The blend ages in Bulgarian oak barrels for 18 months and 1 year in bottle.
